1 red or yellow bell pepper
1/3 pound pork
7 oz. can green chile
1/4 cup orange juice
2 oz. tequila
1. Cut bell pepper and onion into thin slices. Saute in olive oil until caramelized.
2. Slice pork into thin strips. Add to pan and season with cumin, coriander and white pepper and cook until no longer pink.
3. Add green chile, orange juice and tequila, and toss until well-mixed. Simmer until liquid cooks off.
4. Serve in tortillas.
