Two 4 oz Salmon Fillets
Salad:1 bunch Spinach
1 cup Walnuts
1/4 cup Goat Cheese
** ingredient amounts subject to your taste
Steps:1. Marinate salmon in minced garlic, olive oil and pepper. Cook adding lemon juice, until done (light pink and firm).
2. In a bowl, mix equal parts balsamic vinegar, olive oil and dijon mustard adding more for desired taste.
3. Toss all salad ingredients into a large bowl and mix with dressing. Top with salmon.
